Tuscany: health, longevity & rural sustainability

The experiential seminar explores the connection between local food, wine, tourism, and healthy living in rural Tuscany, with a focus on sustainability and longevity. Students engage in hands-on activities in food and wine production and agritourism, while learning the principles of healthy living through physical activity, nutrition, and community.
The program takes place at Castello Sonnino, where students live and work within a historic estate, experiencing sustainable agricultural practices and the philosophy of slow food. Activities include cooking classes, market visits, field excursions, and tastings, along with guest lectures from universities in Florence, Siena, and Pisa. The goal is to apply these insights to support sustainable development and healthy lifestyles in other contexts, such as British Columbia.
