Slow Food, Slow Medicine: Healthy Living in Tuscany: Augsburg University Nursing Program
 
This ten-day program offered in partnership by Augsburg’s Center for Global Education & Experience and Castello Sonnino International Educational Center explores the deep connections between food, health, and culture through the lens of Tuscany’s landscapes and traditions. Based at Castello Sonnino in the hilltop town of Montespertoli, participants will examine how ideas of wellness have evolved across history and continue to shape communities today. The itinerary includes lectures with Italian scholars on religion, politics, and public health; visits to Siena, Florence, and local farms; and hands-on experiences such as bread and pasta making, olive harvesting, and herbal workshops. Encounters with practitioners of the slow food and slow medicine movements highlight approaches to nourishment and healing that honor sustainability, community, and care.
